This week, as most of you know, we continue with our celebrations as the fair of Fuengirola, which is one of the most important in Costa del Sol, doesn’t finish till Friday the 12th of October.
The 12th of October is not only an important day in Fuengirola, but also in the rest of Spain as it is also “Hispanity Day”, our national holiday.
If we think about it, there is nothing more typical of the fair and more typical Spanish than the Spanish omelette and that is why we have decided to dedicate this post to this beautiful dish.
Spanish omelette is the star dish in all tapas bars not only in Spain but in the rest of the world too because not only it is delicious but also it is very easy to cook and its ingredients are suitable to all pockets.

Ingredients for 3-4 persons:
– 4 eggs
– ½ kilo of potatoes
– ¼ litre of olive oil
Step 1: Wash, peel and then cut the potatoes into thin slices. Once the oil is hot in a pan add the potatoes with a pinch of salt and let them fry. When the potatoes have a beautiful golden colour take them out of the pan and put them on a sieve to get rid of the excess of oil. If you do not have any you can put them on a dish and use absorbent kitchen roll.
Step 2: Add a pinch of salt to the eggs and whisk them. Once they are well whisked add the potatoes and mix them well.
Step 3: Put a pan with 2 tablespoons of oil on the heat. When the oil is hot add the egg and potato mixture and move the pan a little bit to stop the omelette from sticking. When you see that the omelette is set put a lid on your pan and turn it over (it is very easy, you only have to do it with confidence). When our omelette has a beautiful golden tone on both sides then it is ready to serve and eat.
