It seems olé is an interjection of Arabic origin. It is very used in Spanish and its purpose is to encourage or express excitement or admiration.
The word olé is now part of the Spanish culture and it tends to get linked not only to flamenco but also to bullfighting.
We Spaniards, for example, use the word olé when the performance of a flamenco singer, a flamenco dancer or a bullfighter thrills us. Giving applause would not be enough; we need to speak from the soul so that means that olé should be considered one of the most honest compliments ever.
In Andalusia the word olé is even more used than in the rest of Spain so it is possibly one of the expressions we use the most in our daily life.
